Light grilled chicken salad – perfect for Vigo paper plates:

Ingredients:

2 chicken breast fillets
1 tablespoon olive oil
salt
pepper
sweet paprika
mixed salad leaves
cherry tomatoes
fresh cucumber
avocado
vinaigrette dressing (olive oil, lemon juice, honey, mustard)

Method:

1. Rub the chicken fillets with the seasoning and olive oil and grill for 5-7 minutes on each side. 2. Chop the vegetables and wash and dry the salad leaves. 3. Arrange the salad leaves, vegetables and sliced grilled chicken on Vigo paper plates. 4. Drizzle everything with the vinaigrette dressing and serve immediately.
