Grilled prawns


Ingredients:

  • 1 kg large peeled prawns

Marinade:

  • 4 tablespoons chopped parsley
  • a cup of olive oil
  • a tablespoon of chopped oregano
  • 4 tablespoons lemon juice
  • a chopped garlic clove
  • salt, pepper
  • cayenne pepper
  • a tablespoon of tomato purée

Method:

Mix all the marinade ingredients together. Place the prawns in a glass bowl, pour over the marinade and leave at room temperature for at least 2 hours. Stir several times while marinating. Thread the prawns onto skewers. Place on a hot grill rack and barbecue for 2–3 minutes.
